Denis Broderick is the Wine & Food Development Consultant with Woodford Bourne NI (formerly Direct Wine Shipments Wholesale).
Denis is a former President of the Hotel and Catering International Management Association. The HCIMA (now the Institute of Hospitality), with 24,000 members in over 100 countries, is the worldwide professional body for managers in the food and accommodation services industry.
With over fifty years experience in the hospitality industry, Denis has held craft and management positions in many sectors of the industry, including education and training. His experience ranges from working with millionaires in private service, to teaching prisoners how to cook; working for the biggest hotel chain in the world and the world’s biggest oil company, to the smallest single-handed business; this experience gained not only in the UK but also overseas, in countries that include Canada, Southern Africa and the Middle East.
As one of the first Wine and Spirit Education Trust Diploma holders in Northern Ireland, Denis has been at the forefront of wine education in the province for almost thirty years. As Myra Greer, wine writer for the ‘Belfast Telegraph’ said: “Denis Broderick … was my first wine tutor. His presentations are informative, unstuffy, witty and entertaining.”
Denis was the first local inspector for the Taste of Ulster initiative set up to encourage higher standards in the catering industry in Northern Ireland. You might say he ate for his country.
He is accredited with setting up the Northern Ireland Tourist Board’s Welcome Host Award training scheme, designed to boost Northern Ireland’s hospitality and tourism image.
To stop his waistline expanding from the effects of all that food and wine consumption he has cycled for charity across America (yes, all 3,000 miles), the Canadian Rockies, South Africa, China, Vietnam, Cuba, Jordan, Brazil and, just recently, over the Andes from Chile to Argentina: stopping off, where possible, to visit many vineyards for a quick sample and a bit of business.
Denis also regularly publishes articles on wine and food issues in local consumer magazines and newsletters.
